Mexican Chicken Salad

This is great lunch or dinner option now that it’s hot out. 

This dish is highly popular in southern Mexico where it’s hot nearly year round.


Ingredients


  • 2 Chicken breasts cooked and shredded

  • 2 Carrots  cooked and cubed

  • 1 Potato cooked and cubed

  • 1 Cup sweet peas cooked and drained

  • 1 Cup Mayonnaise or to taste

  • 1 Can of pickled jalapeños 


Instructions


  1. In a large bowl combine everything, mix. Add mayo to taste. You may need a little more than 1 cup, depending on sizes of your ingredients. Jalapeños are optional, but they add a nice kick to it. 
  2. Serve with saladitas (Mexican saltine crackers).
